Two currencies show up across the guides and the store, and they do not reset on the same schedule.
Cash
Cash is the run currency. You get it by peeling and selling. You spend it on knives, buckets, bags, shovels, machines, and the in-run upgrades the shop is offering. Class and beginner guides say Cash is gone at the end of the run. Do not hoard it for the hub.
There is no stable public price list for Cash tools. A single recorded comment that a vacuum "was not worth $30" is one session, not a catalog.
Gems
Gems are described as the permanent currency. You earn them by finishing a run, from the seven-day reward track on the captured rewards screen, and from gem packs in the Robux shop. You spend them on the hub tracks and on class rolls.
The four hub tracks include Gem Boost. Later costs and the size of each step were not on the notes that only confirmed the track exists. A 40 Gem roll cost appears in one class guide and should be checked on the roll button.

These three developer products were listed that day. The gems-per-Robux figure uses only the name and the price:

Among those three names, 999 Gems bought the most named gems per Robux. That does not say what a gem unlocks, and the prices can change. A 2x Gems game pass was listed at 99 Robux the same day. It is a multiplier, not a gem pile.
Diamonds are not the same word as Gems
Diamond potatoes are a rare potato type, like gold and rainbow. Official art also shows a gem-studded pile. A diamonds write-up says a diamond tally can appear and that the link between that tally and spendable Gems was not confirmed. Do not assume a diamond potato is one Gem.
